Oh, I love the idea of a single serving dessert. We could use more recipes for just one or two servings around our house too! Inevitably the cake (or pie, or cookies) end up being eaten by our friends at work!!

Kim, it’s so helpful to have four hungry men around to eat the desserts — I’d definitely bake more often if that was the case! And yes…a bite of chocolate with a bit of port — excellent stuff!

Another good example of using what is on hand. For years now I have been a bite sized dessert eater. Or a wee nip of port drinker. So I make dessert for my four hungry men, and I just have a bite. They have grown so used to this they don’t even think I might be having dessert anymore. It’s funny. Of course they don’t know about the chocolate bar I hoard in the kitchen – goes well with that port.

Kalyn, I really can’t wait to read the round-up — I’m guessing it’s going to be HUGE! And yes — dessert for one can be a helpful thing. I just may give the persimmon version a try today, since I picked up two persimmons at the market and am not sure I want to employ both of them in salads…

Thanks Genie. It is definitely time for me to move on to a new challenge, but it’s still fun hosting one final time and hearing from a lot of long-time participants. Love the idea of a dessert for one, because dessert is rarely on the menu at my house, for the exact reason you are describing.
