A few weeks ago, I made and froze my first-ever potpie. On a day when I had some particularly thorny budget issues to work on, I took some of the leftovers to the office with me. After all, there are times when a girl just knows she’s going to need some comfort food midway through the process.
As I was reheating my serving, a coworker walked in our office kitchen. She and hadn’t seen each other for weeks, but in that particular 24-hour period, had run into each other in the kitchen at least three times. “We seem to be on the same eating schedule,” she said.
“I’m actually on a budget-avoidance schedule,” I said.
The microwave finished its work, and I lifted off the lid of my storage container to add salt and pepper to the potpie.
“That looks good,” said my coworker.
“It’s turkey potpie,” I said. “It’s very comforting. It’s like Prozac for work.”
“I might have to come to your office later and try that,” she said.

I’m in the process of making turkey pot pie for Mr Chiots while hunting. I love love love it, I make mine with dumplings instead of the flaky crust though.

Chiot’s Run, I basically did a dumpling style, as well — it was a whole-wheat biscuit crust, which functionally works like dumplings on top. So comforting and so satisfying. :-)
